Transcription: Zest is the outermost oily part of the citrus skin. To remove zest, you can use a device called a zester. Hold the tip of the zester against the outside of the fruit and pull into the skin and downward. Only the colored part should be scraped off because the white pith will add a bitter taste to your dish.
